Instructions
For the noodles: 1. Blanch fresh egg noodles for 1 minute and drain. 2. Lightly fry with oil until golden brown and crispy. Set aside to cool on a paper towel. For the toppings: 1. Sauté sweet greens (Cai Ngot) with garlic and oil until wilted. Season with salt, sugar, and a little MSG. Set aside. 2. Sauté garlic, shrimp, imitation crab, squid, white onion, green onions, and baby corn until everything is cooked through. Season with oyster sauce, soy sauce, sesame oil, sugar, a little MSG, and black pepper. For the gravy sauce: 1. In a saucepan, heat equal parts chicken broth and water. Season with additional oyster sauce, sugar, and sesame oil. Thicken with cornstarch slurry until thick gravy consistency. To serve: 1. Add the crispy noodle to the serving plate first.
